Slow cooked beef curry

Sometimes “witching hour” can be bedlam in this house. Working, keeping up with general housework, managing schedules and wrangling kids just gets on top of me – easy slow cooker recipes mean I don’t have to try and make a meal amongst all of that mayhem!

On a busy day, I just prepare something in the slow cooker in the morning to ease the load.  This has lead to me having an unhealthy effection for my slow cooker.  I really do love it.  No, really!

Ingredients:Slow cooker recipes
1kg diced lean beef
1/2 cup flour
2 tbsp oil
2 diced onions
2 tbsp curry paste
3 tbsp tomato paste
4 potatoes (quartered)
1 cup water
2 beef stock cubes

Directions:
Dust beef in flour and cook in 1/2 of the oil until brown. Place in slow cooker.

Heat remaining oil and cook onion until softened. Add curry paste and tomato paste and cook for 1 minute. Transfer to slow with all remaining ingredients and cook on low for 8 hours stirring occasionally.

Serve with rice and pappadams.
Tip: Try couscous instead of rice for a change of pace!
